The sauce in this dish gets its kick from Awaze, a mixture of an Eritrean / Ethiopian chili powder fragrant with cardamom, fenugreek, clove, dried garlic and ginger. Use it once and you'll see why a good chunk of Eritrean / Ethiopian cuisine is built on. Here's what you need: beef tenderloin, avocado oil, black pepper, kosher salt, berbere, spiced butter, medium red onion, garlic, ginger, tomatoes, Rosmerry and parsley to garnish.
